1. Moong Dal Soup (Yellow Split Lentil Soup)

Ingredients:

  • 1/2 cup moong dal (yellow split lentils)
  • 1 small carrot, chopped
  • 1 small tomato, chopped
  • 1/2 inch piece ginger, grated
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin seeds
  • 1/2 tsp black pepper (optional, adjust per taste)
  • Salt to taste (preferably rock salt or low-sodium salt)
  • Fresh coriander leaves for garnishing
  • Water (as required)

Instructions:

  1. Rinse the moong dal thoroughly and soak it for 10–15 minutes.
  2. In a large pan, add the soaked moong dal with water (about 4 cups) and bring it to a boil.
  3. Once the dal is boiling, lower the heat and let it simmer until the dal softens (about 15-20 minutes).
  4. In a separate pan, dry roast cumin seeds and grated ginger until aromatic, then add chopped carrots and tomatoes.
  5. Add the sautéed vegetables to the boiling dal and stir well.
  6. Add turmeric powder, black pepper, and salt. Let the soup cook for another 5-7 minutes.
  7. Garnish with fresh coriander leaves and serve warm.
