  • Ingredients:

    • 2 bell peppers, halved and de-seeded
    • 1/2 cup cooked quinoa
    • 1/4 cup black beans
    • 1/4 tsp cumin powder
    • Salt and pepper to taste
  • Instructions:

    1. Preheat the oven to 375°F (190°C).
    2. Stuff the halved bell peppers with quinoa, black beans, cumin powder, salt, and pepper.
    3. Place on a baking sheet and bake for 20 minutes.
    4. Serve warm with a side salad.
