19. Lentil and Vegetable Stew

  • Ingredients:

    • 1/2 cup green lentils, washed
    • 1 carrot, chopped
    • 1 zucchini, chopped
    • 1/2 cup spinach leaves
    • 1/4 tsp cumin powder
    • 1/4 tsp turmeric powder
    • Salt to taste
    • Fresh coriander for garnish
  • Instructions:

    1. In a pot, add lentils, vegetables, water, cumin powder, turmeric powder, and salt.
    2. Bring it to a boil and then simmer for 20–25 minutes until the lentils are cooked and soft.
    3. Stir in spinach leaves and cook for another 2 minutes.
    4. Garnish with fresh coriander and serve hot.
