20. Vegetable Poha (Flattened Rice)

  • Ingredients:

    • 1 cup poha (flattened rice)
    • 1 small potato, diced
    • 1/4 cup peas
    • 1/4 onion, chopped
    • 1/2 tsp mustard seeds
    • 1/4 tsp turmeric powder
    • Salt to taste
    • Fresh coriander for garnish
  • Instructions:

    1. Rinse poha in water and drain it thoroughly.
    2. In a non-stick pan, dry roast mustard seeds until they splutter.
    3. Add chopped potatoes and peas, and cook for 5 minutes.
    4. Add onions and turmeric powder, and cook until soft.
    5. Add the rinsed poha, salt, and mix well.
    6. Garnish with fresh coriander and serve warm.
