8. Methi (Fenugreek) and Cabbage Stir-fry

Ingredients:

  • 1 cup cabbage, shredded
  • 1/2 cup methi (fenugreek) leaves, chopped
  • 1/2 onion, chopped
  • 1/4 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/2 tsp ginger, grated
  • Salt to taste

Instructions:

  1. In a non-stick pan, dry roast cumin seeds and grated ginger until aromatic.
  2. Add chopped onions and cook for 1–2 minutes until they soften.
  3. Add shredded cabbage and chopped methi leaves, stir well.
  4. Add turmeric powder and salt, and cook covered for 5–7 minutes until the vegetables are tender.
  5. Stir occasionally and cook until the cabbage is slightly caramelized but not overcooked.
  6. Serve hot as a side dish with dal or roti.
