7. Spinach and Moong Dal Paratha (Oil-free)

Ingredients:

  • 1/2 cup whole wheat flour
  • 1/2 cup moong dal (yellow split lentils), cooked and mashed
  • 1 cup spinach, chopped
  • 1 small green chili, chopped (optional)
  • 1/4 tsp cumin powder
  • 1/4 tsp turmeric powder
  • Salt to taste
  • Water as needed

Instructions:

  1. Cook moong dal until soft, then mash it with a fork or blend it into a smooth paste.
  2. Blanch the spinach leaves by boiling them briefly and then chopping them finely.
  3. In a mixing bowl, combine the wheat flour, mashed moong dal, chopped spinach, green chili, cumin powder, turmeric, and salt.
  4. Add water gradually and knead into a soft dough.
  5. Divide the dough into small balls and roll them out into flat circles (parathas) without using oil.
  6. Cook the parathas on a non-stick pan over medium heat, flipping occasionally, until both sides are golden brown.
  7. Serve with a side of plain yogurt or a light vegetable pickle.
