17. Mung Bean Salad with Lemon Dressing

Ingredients:

  • 1/2 cup mung beans, sprouted
  • 1/4 cucumber, diced
  • 1 small tomato, diced
  • 1/4 onion, finely chopped
  • 1 tbsp lemon juice
  • Fresh parsley, chopped
  • Salt to taste

Instructions:

  1. Rinse and sprout the mung beans for 2–3 days (or use canned sprouted beans).
  2. In a bowl, combine the mung beans, cucumber, tomato, and onion.
  3. Drizzle with lemon juice, add salt, and toss.
  4. Garnish with chopped parsley and serve chilled.
