5. Lentil & Spinach Soup

Ingredients:

  • 1/2 cup red lentils (masoor dal)
  • 1 cup spinach leaves, chopped
  • 1 small tomato, chopped
  • 1/2 inch ginger, grated
  • 1/4 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • Salt to taste
  • Fresh coriander for garnish
  • Water as needed

Instructions:

  1. Wash and soak red lentils for 10 minutes.
  2. In a pot, add lentils, water (about 3 cups), and bring to a boil.
  3. Add the chopped spinach, tomato, ginger, cumin seeds, turmeric powder, and salt.
  4. Cook on medium heat for about 20 minutes, until the lentils are soft.
  5. Once cooked, blend the soup lightly if you prefer a smoother texture.
  6. Garnish with fresh coriander and serve warm.
